Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained
  • 1 cup corn kernels
  • 1 can diced tomatoes, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • Optional toppings: diced avocado, chopped fresh cilantro, sour cream, salsa, sliced jalapeños, lime wedges

Directions

Preheat your Fuego Pizza Oven

Preheat your oven to 375°F (190°C).

Prepare the Peppers

Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish, cut side up, and set aside.

Cook the Meat Mixture

In a skillet over medium heat, cook the ground beef or turkey until browned. Add the diced onion and minced garlic and cook for 2-3 minutes until softened.

Add the Beans and Veggies

Stir in the drained black beans, corn kernels, and diced tomatoes. Sprinkle taco seasoning over the mixture and stir until well combined. Cook for another 5 minutes, stirring occasionally, until heated through.

Stuff the Peppers

Spoon the meat mixture evenly into the hollowed-out bell peppers, pressing down gently to fill them. Sprinkle shredded cheese on top of each stuffed pepper.

Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Garnish and Serve

 Remove the foil and bake for an additional 5 minutes to brown the cheese slightly. Remove from the oven and let cool for a few minutes before serving. Garnish with optional toppings such as diced avocado, chopped fresh cilantro, sour cream, salsa, sliced jalapeños, and lime wedges.
